Introduction:                                                                                                                        

Starch, high polymer a carbohydrate, is composed of two polysaccharides, amylose and amylopectin. Starch substrate

 (like corn starch) needs a stable high-temperature amylase to produce short chain dextrin. But the vine amylase is mainly

 used for grape syrup, high fructose corn syrup and for the hydrolysis of alcohol production industry of starch. High

 temperature stable alpha amylase is a bacterial amylase high-temperature stability, by Bacillus licheniformis fermentation.

 This product has the advantages of high temperature resistance good characteristics, widely used in starch sugar

 (glucose, maltose, dextrin, oligosaccharides), alcohol, beer, brewing, textile, printing and dyeing, papermaking industry.


Mechanism:                                                                                                                        

High temperature α- amylase enzyme is an endonuclease which can rapidly and randomly hydrolysis α-1,4- glucoside 

bond into starch and dextrin at a higher temperature, so that the viscosity of gelatinized starch rapidly decrease and the

 product was of varying lengthss short chain dextrin and small amount of oligosaccharides.


Characteristics:                                                                                                                     

1.Temperature range: the effective temperature range is 55-100 ℃, the optimum temperature is 85-97. It still maintain 

   a considerable vitality at100℃, in the jet liquefaction,instantaneous temperature can be up to 105-110 ℃.

2.pH Range: effective pH range is 5.0-8.0, and the optimum pH range is 5.8-6.5.

3.Effect of calcium concentration on enzyme activity: The product of Ca2 + less demanding,50-70ppm Ca2 + is                sufficient.
